工作職責:
1. 協助廚師長和主廚進行食材的采購計劃制定,根據餐廳的菜單需求和客流量,提出合理的食材采購建議。
2. 負責食材的驗收工作,檢查食材的新鮮度、質量和數量是否符合要求,對不合格的食材及時進行退換處理。對食材進行清洗、去皮、切割、腌制等初步加工處理,確保食材干凈、衛生、易于烹飪。
3. 按照規定的儲存方法和要求,將食材妥善存放于冰箱、倉庫等儲存區域,防止食材變質和浪費。
4. 在廚師長和主廚的指導下,協助進行菜肴的烹飪工作,確保菜肴的口感和質量。
5. 掌握各種烹飪設備的使用方法和操作規程,如爐灶、烤箱、蒸鍋等,確保設備的安全運行。
6. 負責烹飪過程中的調料添加和調味工作,根據菜肴的口味要求,準確掌握調料的用量和比例協助廚師長和主廚進行菜肴的擺盤和裝飾工作,提高菜肴的美觀度和吸引力。
7. 負責廚房的清潔工作,包括爐灶、工作臺、地面、墻壁等區域的清潔,保持廚房的整潔和衛生。
8. 定期對廚房設備進行清潔和維護,確保設備的正常運行和使用壽命。
9. 嚴格遵守食品安全衛生制度,確保食材的儲存、加工和烹飪過程符合衛生標準,防止食品污染和食物中毒。
10. 協助廚師長進行廚房的安全管理工作,如檢查燃氣、電器等設備的安全狀況,防止火災和其他安全事故的發生。
11. 完成廚師長和主廚交辦的其他工作任務,積極配合餐廳的整體運營和管理。
