工作職責(zé):
1. 協(xié)助廚師長(zhǎng)和主廚進(jìn)行食材的采購(gòu)計(jì)劃制定,根據(jù)餐廳的菜單需求和客流量,提出合理的食材采購(gòu)建議。
2. 負(fù)責(zé)食材的驗(yàn)收工作,檢查食材的新鮮度、質(zhì)量和數(shù)量是否符合要求,對(duì)不合格的食材及時(shí)進(jìn)行退換處理。對(duì)食材進(jìn)行清洗、去皮、切割、腌制等初步加工處理,確保食材干凈、衛(wèi)生、易于烹飪。
3. 按照規(guī)定的儲(chǔ)存方法和要求,將食材妥善存放于冰箱、倉(cāng)庫(kù)等儲(chǔ)存區(qū)域,防止食材變質(zhì)和浪費(fèi)。
4. 在廚師長(zhǎng)和主廚的指導(dǎo)下,協(xié)助進(jìn)行菜肴的烹飪工作,確保菜肴的口感和質(zhì)量。
5. 掌握各種烹飪?cè)O(shè)備的使用方法和操作規(guī)程,如爐灶、烤箱、蒸鍋等,確保設(shè)備的安全運(yùn)行。
6. 負(fù)責(zé)烹飪過(guò)程中的調(diào)料添加和調(diào)味工作,根據(jù)菜肴的口味要求,準(zhǔn)確掌握調(diào)料的用量和比例協(xié)助廚師長(zhǎng)和主廚進(jìn)行菜肴的擺盤和裝飾工作,提高菜肴的美觀度和吸引力。
7. 負(fù)責(zé)廚房的清潔工作,包括爐灶、工作臺(tái)、地面、墻壁等區(qū)域的清潔,保持廚房的整潔和衛(wèi)生。
8. 定期對(duì)廚房設(shè)備進(jìn)行清潔和維護(hù),確保設(shè)備的正常運(yùn)行和使用壽命。
9. 嚴(yán)格遵守食品安全衛(wèi)生制度,確保食材的儲(chǔ)存、加工和烹飪過(guò)程符合衛(wèi)生標(biāo)準(zhǔn),防止食品污染和食物中毒。
10. 協(xié)助廚師長(zhǎng)進(jìn)行廚房的安全管理工作,如檢查燃?xì)狻㈦娖鞯仍O(shè)備的安全狀況,防止火災(zāi)和其他安全事故的發(fā)生。
11. 完成廚師長(zhǎng)和主廚交辦的其他工作任務(wù),積極配合餐廳的整體運(yùn)營(yíng)和管理。
